Ingredients
- 1 tbsp olive oil
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tsp ground turmeric
- 0.5 tsp ground black pepper
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 lb boneless skinless chicken breasts or thighs
- 6 cups chicken broth
- 1 cup coconut milk or heavy cream
- 1 tsp salt
- 2 tbsp fresh parsley or cilantro, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and cook until soft and translucent.
- Stir in garlic, ginger, turmeric, and black pepper and cook until fragrant.
- Add carrots and celery, stirring to coat them in the spices.
- Add the chicken and pour in the chicken broth. Bring to a gentle simmer.
- Cook until the chicken is tender, about 20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the coconut milk or cream.
- Simmer for another 5–10 minutes until slightly thickened.
- Taste, adjust seasoning, and finish with fresh herbs before serving.

- Coconut milk keeps the soup dairy-free and creamy.
- Add spinach or kale at the end for extra nutrients.
- A squeeze of lemon juice brightens the flavors.
- If soup thickens too much, add extra broth when reheating.
