Instructions

  1. Preheat oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into pan for crust.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing gently. Stir in sour cream and vanilla. Pour over crust.
  4. Toss apples with brown sugar, cinnamon, nutmeg, and lemon juice. Layer over cheesecake batter.
  5. Mix oats, flour, brown sugar, cinnamon, and melted butter. Sprinkle over apples.
  6. Bake 60–70 minutes until set but slightly jiggly in the center.
  7. Cool completely, then refrigerate at least 4 hours or overnight.
  8. Before serving, drizzle with caramel sauce and sprinkle with extra crisp topping if desired.

Notes

  • For a spicier crust, use gingersnap crumbs instead of graham crackers.
  • Add chopped pecans or walnuts to topping for extra crunch.
  • A water bath can help prevent cracks and ensure creaminess.
