Description

Ingredients

  • For the crust:
  • 1 ½ cups graham cracker crumbs

  • 3 cups apples, peeled, cored, and diced
  • ½ cup brown sugar

  • 1 tbsp lemon juice
  • 12 tbsp cornstarch or flour (to thicken)
  • For the crumble topping:
  • ½ cup all‑purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 6 tbsp cold butter, cubed

Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9‑inch springform pan.
  2. Make the crust: Mix graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the pan. Bake 8–10 minutes. Let cool.
  3. Make the apple layer: In a skillet, cook diced apples with brown sugar, cinnamon, lemon juice, and cornstarch over medium heat until apples are soft and the mixture thickens. Cool slightly.
  4. Make the cheesecake filling: Beat cream cheese and sugar until smooth. Add sour cream (or Greek yogurt), eggs, vanilla, and flour, mixing until combined. Pour over cooled crust.
  5. Spoon the apple mixture evenly over the cheesecake layer.
  6. Make the crumble: In a bowl, combine flour, oats, brown sugar, cinnamon, and salt. Cut in cold butter until crumbly. Sprinkle evenly over the apple layer.
  7. Bake 55–65 minutes, until the center is just set. Cool to room temperature, then refrigerate at least 4 hours or overnight.
  8. Slice and serve chilled.
