A homemade version of Arby’s classic Beef & Cheddar sandwich featuring tender roast beef, a creamy cheddar sauce, sautéed onions, and soft slider buns—all the flavor without the drive-thru.

Ingredients

  • 8 oz thinly sliced roast beef (deli-style or leftover)
  • 4 slider buns or 2 sandwich rolls
  • 1 tbsp butter or olive oil
  • 1 small onion, thinly sliced
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/4 cup mild cheddar cheese, shredded (optional)
  • 3/4 cup milk or cream
  • 1 tbsp flour or cornstarch
  • 1 tsp Dijon mustard or horseradish sauce
  • 1 tsp Worcestershire sauce
  • Salt and black pepper to taste

Instructions

  1. Toast buns with butter or oil until golden and set aside.
  2. In a skillet, sauté sliced onion until translucent and slightly caramelized.
  3. Add roast beef to skillet and warm through, seasoning with salt and pepper.
  4. In a separate saucepan, melt butter and whisk in flour or cornstarch to make a roux.
  5. Gradually whisk in milk, stirring until thickened.
  6. Stir in both cheeses, Dijon mustard, Worcestershire sauce, salt, and pepper. Whisk until smooth and creamy.
  7. Place warmed roast beef and onions on the bottom buns.
  8. Generously spoon cheese sauce over the beef and top with the other half of the bun.
  9. Repeat with remaining sandwiches and serve warm.
