- 8 oz thinly sliced roast beef (deli-style or leftover)
- 4 slider buns or 2 sandwich rolls
- 1 tbsp butter or olive oil
- 1 small onion, thinly sliced
- 1/2 cup sharp cheddar cheese, shredded
- 1/4 cup mild cheddar cheese, shredded (optional)
- 3/4 cup milk or cream
- 1 tbsp flour or cornstarch
- 1 tsp Dijon mustard or horseradish sauce
- 1 tsp Worcestershire sauce
- Salt and black pepper to taste
Instructions
- Toast buns with butter or oil until golden and set aside.
- In a skillet, sauté sliced onion until translucent and slightly caramelized.
- Add roast beef to skillet and warm through, seasoning with salt and pepper.
- In a separate saucepan, melt butter and whisk in flour or cornstarch to make a roux.
- Gradually whisk in milk, stirring until thickened.
- Stir in both cheeses, Dijon mustard, Worcestershire sauce, salt, and pepper. Whisk until smooth and creamy.
- Place warmed roast beef and onions on the bottom buns.
- Generously spoon cheese sauce over the beef and top with the other half of the bun.
- Repeat with remaining sandwiches and serve warm.
