Ingredients
- 2 ripe avocados, diced
- 1 large fresh mango, diced
- 1/4 small red onion, thinly sliced
- 2 tablespoons chopped fresh cilantro
- 2 cups mixed greens or baby spinach (optional)
For the zesty lime dressing:
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 tablespoons olive oil
- 1 teaspoon honey or maple syrup
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Peel and dice the avocados and mango into bite-sized pieces. Thinly slice the red onion and chop the cilantro.
- In a large bowl, gently toss the avocado, mango, red onion, cilantro, and mixed greens if using.
- In a small bowl, whisk together lime juice, lime zest, olive oil, honey (or maple syrup), salt, and pepper.
- Just before serving, drizzle the dressing over the salad and toss gently to coat without mashing the avocado.

- Add grilled chicken, shrimp, or black beans for a heartier salad.
- For extra crunch, toss in chopped cucumber, cherry tomatoes, or toasted nuts.
