Ingredients
- 1.5 lbs baby potatoes or Yukon gold potatoes, halved
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon dried Italian herbs or thyme
- Salt and black pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss halved potatoes with olive oil, garlic powder, paprika, Italian herbs, salt, and pepper.
- Sprinkle grated Parmesan cheese onto the lined baking sheet in small mounds.
- Place each potato half cut-side down on top of the Parmesan mounds.
- Bake for 25–30 minutes or until bottoms are golden and crispy.
- Let cool for a few minutes before lifting potatoes off the sheet.
- Garnish with fresh parsley and serve warm.
