Description

Baked Parmesan Zucchini is a light and flavorful side dish featuring tender zucchini rounds coated with savory Parmesan and seasonings, baked until golden with lightly crisp edges.

Ingredients

  • 2 medium zucchini, sliced into rounds
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place zucchini slices in a bowl and drizzle with olive oil, tossing to coat evenly.
  3. In a small bowl, mix Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
  4. Arrange zucchini slices in a single layer on the prepared baking sheet.
  5. Sprinkle the Parmesan mixture evenly over the zucchini slices.
  6. Bake for 15–20 minutes until zucchini is tender and cheese is golden.
  7. For extra crispiness, broil for 1–2 minutes, watching carefully.
  8. Garnish with fresh parsley if desired and serve warm.

Notes

  • Add breadcrumbs mixed with Parmesan for extra crunch.
  • Sprinkle red pepper flakes or smoked paprika for additional flavor.
  • Cut zucchini into spears for a crispier texture.
  • Use freshly grated Parmesan for best flavor.
  • Store leftovers in the refrigerator for up to 3 days.
  • Reheat in a 350°F (175°C) oven to restore crispness.
