Description

BBQ Chicken and Rice is a quick, hearty one-skillet meal that combines tender chicken, smoky-sweet barbecue sauce, and fluffy rice. It’s easy to make, customizable, and packed with comforting flavor.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs (cubed or shredded)
  • 3 cups cooked white or brown rice
  • 3/4 cup BBQ sauce (your favorite kind)
  • 1/2 onion (diced)
  • 2 cloves garlic (minced)
  • 1 tbsp olive oil or butter
  • 1/4 cup chicken broth or water (optional)
  • Salt and black pepper, to taste
  • Optional: 1 cup shredded cheddar cheese
  • Optional: 1/2 cup corn
  • Optional: 1/2 cup black beans
  • Optional: Sliced green onions or chopped parsley for garnish

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add diced onion and garlic and sauté until softened and fragrant, about 2–3 minutes.
  3. Add the chicken and cook until browned and fully cooked through. If using pre-cooked chicken, stir to warm through.
  4. Add the cooked rice and BBQ sauce, stirring until well combined. Add a splash of broth or water if the mixture seems dry.
  5. Season with salt and pepper to taste. Stir in any optional add-ins like corn or beans.
  6. If using cheese, sprinkle it over the top, cover the skillet, and let it melt.
  7. Garnish with green onions or parsley and serve hot.

  • Use rotisserie chicken to save time.
  • Day-old rice works best for texture.
