Ingredients
- 1 lb boneless, skinless chicken breasts or thighs (cubed or shredded)
- 3 cups cooked white or brown rice
- 3/4 cup BBQ sauce (your favorite kind)
- 1/2 onion (diced)
- 2 cloves garlic (minced)
- 1 tbsp olive oil or butter
- 1/4 cup chicken broth or water (optional)
- Salt and black pepper, to taste
- Optional: 1 cup shredded cheddar cheese
- Optional: 1/2 cup corn
- Optional: 1/2 cup black beans
- Optional: Sliced green onions or chopped parsley for garnish
Instructions
- Heat olive oil or butter in a large skillet over medium heat.
- Add diced onion and garlic and sauté until softened and fragrant, about 2–3 minutes.
- Add the chicken and cook until browned and fully cooked through. If using pre-cooked chicken, stir to warm through.
- Add the cooked rice and BBQ sauce, stirring until well combined. Add a splash of broth or water if the mixture seems dry.
- Season with salt and pepper to taste. Stir in any optional add-ins like corn or beans.
- If using cheese, sprinkle it over the top, cover the skillet, and let it melt.
- Garnish with green onions or parsley and serve hot.
