Ingredients

  • 2 flatbreads (store-bought or homemade)
  • 1 1/2 cups cooked chicken breast or rotisserie chicken, shredded
  • 1/2 cup BBQ sauce (favorite brand or homemade)
  • 1 1/2 cups shredded mozzarella (or mozzarella-cheddar blend)
  • 1/4 red onion, thinly sliced
  • 1 tbsp olive oil (for brushing)
  • 2 tbsp fresh cilantro or parsley, chopped (optional, for garnish)
  • 1/4 tsp crushed red pepper flakes (optional, for heat)

Instructions

  1. Preheat oven to 425°F (220°C) with a baking sheet or pizza stone inside.
  2. Brush flatbreads lightly with olive oil and place on parchment paper.
  3. Spread BBQ sauce evenly over flatbreads, leaving a border around edges.
  4. Top with shredded chicken, cheese, and thin slices of red onion.
  5. Transfer to preheated baking sheet and bake 10–12 minutes until cheese is melted and bubbly and edges are golden.
  6. Remove from oven, rest for 1 minute, then garnish with cilantro or parsley and red pepper flakes if desired.
  7. Slice and serve hot.
