Ingredients
- 2 flatbreads (store-bought or homemade)
- 1 1/2 cups cooked chicken breast or rotisserie chicken, shredded
- 1/2 cup BBQ sauce (favorite brand or homemade)
- 1 1/2 cups shredded mozzarella (or mozzarella-cheddar blend)
- 1/4 red onion, thinly sliced
- 1 tbsp olive oil (for brushing)
- 2 tbsp fresh cilantro or parsley, chopped (optional, for garnish)
- 1/4 tsp crushed red pepper flakes (optional, for heat)
Instructions
- Preheat oven to 425°F (220°C) with a baking sheet or pizza stone inside.
- Brush flatbreads lightly with olive oil and place on parchment paper.
- Spread BBQ sauce evenly over flatbreads, leaving a border around edges.
- Top with shredded chicken, cheese, and thin slices of red onion.
- Transfer to preheated baking sheet and bake 10–12 minutes until cheese is melted and bubbly and edges are golden.
- Remove from oven, rest for 1 minute, then garnish with cilantro or parsley and red pepper flakes if desired.
- Slice and serve hot.
Notes
- Add crispy bacon bits for extra richness.
- Use smoked gouda instead of mozzarella for a smoky twist.
- Swap raw onions for caramelized onions for a sweeter flavor.
- Add sliced peppers or mushrooms for more veggies.
