Ingredients
- 2 cups cooked chicken, shredded or chopped
- 1/2 cup BBQ sauce
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 1/4 small red onion, thinly sliced (optional)
- 2 tablespoons chopped fresh cilantro (optional)
- 1 tablespoon olive oil or butter, for cooking
Instructions
- In a bowl, mix cooked chicken with BBQ sauce until fully coated.
- Heat a skillet over medium heat and lightly grease with oil or butter.
- Place one tortilla in the skillet. Sprinkle cheese on one half, then add BBQ chicken, optional red onion and cilantro, and more cheese.
- Fold tortilla in half and cook for 2–3 minutes per side, until golden brown and cheese is melted.
- Remove from skillet, let cool slightly, then slice into wedges and serve warm.
Notes
- Use rotisserie chicken for a quick alternative.
- Try adding jalapeños, bell peppers, or using chipotle BBQ sauce for extra flavor.
- To keep crispy, reheat in skillet or air fryer rather than microwave.
