Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into chunks
  • 2 cups fresh pineapple, cut into chunks
  • 2 bell peppers (red, yellow, or green), cut into chunks
  • 1 large red onion, cut into chunks
  • 1/2 cup BBQ sauce (your favorite variety)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Toss chicken pieces in olive oil, salt, and pepper.
  3. Thread chicken, pineapple, bell peppers, and onion alternately onto skewers.
  4. Preheat the grill to medium-high heat and lightly oil the grates.
  5. Grill the kabobs for 10–12 minutes, turning occasionally, until the chicken is cooked through.
  6. In the last few minutes of grilling, brush generously with BBQ sauce, letting it caramelize slightly.
