Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into chunks
- 2 cups fresh pineapple, cut into chunks
- 2 bell peppers (red, yellow, or green), cut into chunks
- 1 large red onion, cut into chunks
- 1/2 cup BBQ sauce (your favorite variety)
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Toss chicken pieces in olive oil, salt, and pepper.
- Thread chicken, pineapple, bell peppers, and onion alternately onto skewers.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Grill the kabobs for 10–12 minutes, turning occasionally, until the chicken is cooked through.
- In the last few minutes of grilling, brush generously with BBQ sauce, letting it caramelize slightly.
- Serve the kabobs hot, with extra BBQ sauce on the side.
Notes
- Marinate the chicken in BBQ sauce for a few hours before grilling for extra flavor.
- Swap pineapple for mango or peaches for a different fruity twist.
- Use spicy BBQ sauce for added heat.
- Add zucchini or mushrooms for more vegetables.
- Canned pineapple works, but fresh offers better texture and flavor.
