Ingredients

  • 1 ½ cups old‑fashioned rolled oats
  • ½ cup almond flour or oat flour
  • 1 cup mixed berries (fresh or frozen)
  • ⅓ cup honey or maple syrup
  • ¼ cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • Optional: 1 tablespoon chia seeds, 1 teaspoon lemon zest, or ½ teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8‑inch pan with parchment paper.
  2. In a large bowl, combine oats, almond or oat flour, salt, and any optional chia, lemon zest, or cinnamon.
  3. Stir in melted coconut oil (or butter), honey (or maple syrup), and vanilla until well combined and sticky.
  4. Press about two‑thirds of mixture firmly into the bottom of the pan to form the crust.
  5. Evenly scatter mixed berries over the crust (no need to thaw if frozen).
  6. Crumble remaining oat mixture on top and gently press down.
  7. Bake for 30–35 minutes until top is golden and berries are bubbly.
  8. Cool bars completely in the pan before slicing to allow them to firm up.

Notes

  • Use all raspberries or blueberries depending on preference.
  • Add a splash of lemon juice to berries for extra brightness.
  • Mix chopped almonds or walnuts into crumble for texture.
