Description

Berry Spinach Salad is a fresh, vibrant mix of baby spinach, sweet berries, creamy cheese, and crunchy nuts tossed in a tangy homemade vinaigrette. Perfect as a side or light main dish for any occasion.


Ingredients

  • 6 cups fresh baby spinach
  • 1 1/2 cups mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
  • 1/3 cup crumbled goat cheese or feta
  • 1/3 cup candied pecans or walnuts
  • 1/4 small red onion, thinly sliced (optional)
  • 3 tablespoons olive oil
  • 1 1/2 tablespoons balsamic vinegar or red wine vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and dry the spinach and berries. Slice strawberries if large.
  2. In a small bowl or jar, whisk together olive oil, vinegar, honey or maple syrup, Dijon mustard, salt, and pepper to make the vinaigrette.
  3. In a large salad bowl, combine spinach, berries, cheese, nuts, and red onion if using.
  4. Drizzle the vinaigrette over the salad just before serving.
  5. Toss gently to coat and serve immediately.

Notes

  • Add grilled chicken or shrimp to make it a full meal.
  • Swap spinach for arugula or mixed greens for a peppery twist.
  • Add sunflower seeds or sliced almonds for extra crunch.
