Ingredients
- 6 large hard-boiled eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon or yellow mustard
- 1 teaspoon white vinegar or pickle juice
- Salt and pepper to taste
- Paprika, for garnish
- Optional toppings: chopped chives, sliced jalapeños, diced dill pickles
Instructions
- Peel the hard-boiled eggs and slice them in half lengthwise.
- Gently remove the yolks and place them in a bowl. Mash with a fork until smooth.
- Add mayonnaise, mustard, vinegar or pickle juice, salt, and pepper to the mashed yolks. Stir until creamy and smooth.
- Spoon or pipe the yolk mixture back into the egg white halves.
- Sprinkle with paprika and any additional toppings you like.
