Instructions
Preheat oven to 350°F (175°C) and grease a baking dish.
In a large bowl, mix rolled oats, baking powder, cinnamon, and salt.
In another bowl, whisk eggs, cottage cheese, milk, honey or maple syrup, and vanilla extract until smooth.
Combine wet and dry ingredients, mixing gently until just combined.
Fold in blueberries carefully.
Pour batter into prepared dish and spread evenly.
Bake for 35-40 minutes until golden on top and set in the center.
Let cool slightly before slicing and serving.
Notes
