Ingredients
- 4 cups mixed greens (spinach, arugula, or spring mix)
- 1 cup fresh blueberries
- 1/2 cup pistachios, shelled and chopped
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/3 cup feta cheese or goat cheese
- Dressing:
- 3 tbsp olive oil
- 2 tbsp lemon juice or balsamic vinegar
- 1 tbsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Place mixed greens in a large bowl.
