Ingredients
- 1 1/2 cups cooked brisket (shredded or sliced)
- 2 tbsp maple syrup
- 1 tbsp bourbon
- 1 tbsp brown sugar
- 2 tbsp butter (plus more for grilling)
- 4 thick Belgian-style waffles (homemade or frozen)
- 1 cup sharp cheddar cheese, shredded
- Optional: 1 tbsp Dijon mustard
- Salt and black pepper to taste
Instructions
- Reheat brisket in a skillet over medium heat. Add maple syrup, bourbon, and brown sugar. Simmer until slightly thickened and meat is glazed, about 3–5 minutes.
- Lightly toast or heat waffles until crisp.
- Butter one side of each waffle. On the unbuttered side, layer cheese, brisket mixture, and more cheese. Top with another waffle, buttered side out.
- Heat a skillet or griddle over medium-low. Grill each sandwich 3–4 minutes per side until cheese is melted and waffles are golden.
- Remove from heat, slice, and serve hot.
Notes
- Use thick Belgian waffles to hold the filling without getting soggy.
- For extra tang, add Dijon mustard or pickled onions.
- Spice it up with hot honey or sliced jalapeños.
- Fontina or gouda are great cheese alternatives for more depth.
- Skip bourbon by using more maple syrup and a splash of apple juice or broth.
