Description

This Burrata & Basil Bruschetta with Juicy Tomatoes is a simple yet elegant appetizer featuring toasted bread topped with marinated tomatoes, creamy burrata cheese, and fresh basil. It’s fresh, flavorful, and perfect for entertaining or a light meal.


Ingredients

  • 1 loaf crusty bread or baguette, sliced
  • 2 cups ripe tomatoes, chopped (cherry or vine-ripened preferred)
  • 1 ball burrata cheese
  • 1/4 cup fresh basil leaves
  • 2 tablespoons olive oil (plus more for drizzling)
  • 1 clove garlic, halved
  • Salt, to taste
  • Black pepper, to taste
  • Balsamic glaze (optional, for drizzling)

Instructions

  1. Preheat oven or grill and toast the bread slices until golden and crisp.
  2. While warm, rub each slice of toast with the cut side of a garlic clove.
  3. In a bowl, combine chopped tomatoes with 2 tablespoons olive oil, salt, and black pepper. Let sit for a few minutes to marinate.
  4. Arrange toasted bread on a serving platter. Spoon the marinated tomatoes on top of each slice.
  5. Tear the burrata and place generous pieces on each bruschetta.
  6. Top with fresh basil leaves and drizzle with more olive oil and balsamic glaze if using.
  7. Serve immediately while the bread is still slightly warm.
