Ingredients
- 1 loaf crusty bread or baguette, sliced
- 2 cups ripe tomatoes, chopped (cherry or vine-ripened preferred)
- 1 ball burrata cheese
- 1/4 cup fresh basil leaves
- 2 tablespoons olive oil (plus more for drizzling)
- 1 clove garlic, halved
- Salt, to taste
- Black pepper, to taste
- Balsamic glaze (optional, for drizzling)
Instructions
- Preheat oven or grill and toast the bread slices until golden and crisp.
- While warm, rub each slice of toast with the cut side of a garlic clove.
- In a bowl, combine chopped tomatoes with 2 tablespoons olive oil, salt, and black pepper. Let sit for a few minutes to marinate.
- Arrange toasted bread on a serving platter. Spoon the marinated tomatoes on top of each slice.
- Tear the burrata and place generous pieces on each bruschetta.
- Top with fresh basil leaves and drizzle with more olive oil and balsamic glaze if using.
- Serve immediately while the bread is still slightly warm.
