This buttery brioche bread is rich, tender, and slightly sweet with a golden crust and soft, pillowy crumb. Perfect for toasting, sandwiches, or enjoying warm from the oven.

Ingredients

  • 3 1/4 cups all-purpose flour
  • 2 1/4 tsp active dry yeast (or instant yeast)
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 1/2 cup warm whole milk
  • 1/2 cup unsalted butter, softened and cubed
  • 3 large eggs
  • 1 egg + 1 tbsp water or milk (for egg wash)

Instructions

  1. In a bowl, mix warm milk with yeast and 1 tsp sugar. Let sit for 5–10 minutes until foamy.
  2. In a mixing bowl, combine flour, remaining sugar, and salt. Add yeast mixture and eggs; mix until a rough dough forms.
  3. Gradually add softened butter a few cubes at a time, kneading until the dough becomes smooth and elastic (5–7 minutes with a mixer).
  4. Transfer dough to a lightly oiled bowl, cover, and let rise in a warm place for 1 to 1½ hours, or until doubled.
  5. Deflate the dough, shape it into a loaf, and place in a greased 9×5-inch loaf pan.
  6. Cover and let rise again for 45–60 minutes, until it reaches the top of the pan.
  7. Brush with egg wash for a golden finish.
  8. Bake at 350°F (175°C) for 30–35 minutes until golden and sounds hollow when tapped.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool fully before slicing.

  • Chill dough after first rise to bake the next day.
  • For sweet brioche, add cinnamon sugar or chocolate chips.
