Description

A rich and comforting chicken dish inspired by the classic Italian flavors of cacio e pepe. Juicy chicken is coated in a creamy sauce made with cheese, butter, garlic, and freshly cracked black pepper for a simple yet elegant meal.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup grated parmesan or pecorino romano cheese
  • 1/2 cup heavy cream
  • Extra black pepper for garnish
  • Chopped parsley for garnish (optional)

Instructions

  1. Season the chicken breasts with salt and freshly ground black pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the chicken to the skillet and cook for about 5–6 minutes on each side until golden brown and fully cooked.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, melt the butter and add the minced garlic. Cook for about 30 seconds until fragrant.
  6. Pour in the chicken broth and bring it to a gentle simmer, scraping the bottom of the pan to release any browned bits.
  7. Stir in the heavy cream and grated cheese, whisking until the sauce becomes smooth and slightly thickened.
  8. Return the chicken to the skillet and spoon the sauce over the top.
  9. Simmer for a few minutes so the flavors combine and the chicken warms through.
  10. Garnish with extra black pepper and chopped parsley before serving.

  • Chicken thighs can be used instead of chicken breasts for a juicier texture.
