Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1 tbsp olive oil
- Salt and pepper, to taste
- 2 cloves garlic, minced
- 1/2 cup Caesar dressing (store-bought or homemade)
- 1/4 cup grated parmesan cheese
- 1 bunch fresh asparagus, trimmed
- 1 tbsp lemon juice (optional)
- Optional: crushed red pepper flakes or chopped parsley for garnish
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
- Add garlic to skillet and sauté for 30 seconds until fragrant.
- Reduce heat to medium. Add asparagus and cook for 3–4 minutes until crisp-tender.
- Stir in Caesar dressing and parmesan cheese. Let sauce simmer and thicken slightly.
- Return chicken to skillet and spoon sauce over top. Heat for another 2 minutes.
- Finish with lemon juice and optional garnishes. Serve warm.
Notes
- Use chicken thighs for extra flavor and tenderness.
- Add cherry tomatoes or spinach for more vegetables.
- Mix in a bit of cream cheese or heavy cream for a richer sauce.
- Top with crushed croutons or toasted breadcrumbs for crunch.
- Use a meat thermometer to ensure chicken reaches 165°F.
