Ingredients
- 2 large boneless, skinless chicken breasts (cut into sandwich-sized pieces)
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 2 eggs
- 2 teaspoons Cajun seasoning
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper

- 4 sandwich buns
- 1 cup lettuce
- 1 large tomato, sliced

- Garlic Aioli:
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Slice chicken breasts into sandwich-sized pieces and soak in buttermilk for at least 30 minutes.
- In a bowl, mix flour, cornstarch, Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper.
- In another bowl, beat the eggs.
- Remove chicken from buttermilk, dredge in flour mixture, dip in eggs, then coat again in flour mixture.
- Heat oil in a deep pan over medium heat.
- Fry chicken for 4 to 6 minutes per side until golden brown and cooked through.
- Transfer to a paper towel-lined plate or wire rack to drain excess oil.
- In a small bowl, mix mayonnaise, garlic, lemon juice, salt, and pepper to make the aioli.
- Spread garlic aioli on the buns.
- Assemble sandwiches with crispy chicken, lettuce, tomato, and pickles.
- Serve warm.
