Description

Ingredients

  • 2 large boneless, skinless chicken breasts (cut into sandwich-sized pieces)
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 2 eggs
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying
  • 4 sandwich buns
  • 1 cup lettuce
  • 1 large tomato, sliced
  • 1/2 cup pickles
  • Garlic Aioli:
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Slice chicken breasts into sandwich-sized pieces and soak in buttermilk for at least 30 minutes.
  2. In a bowl, mix flour, cornstarch, Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Remove chicken from buttermilk, dredge in flour mixture, dip in eggs, then coat again in flour mixture.
  5. Heat oil in a deep pan over medium heat.
  6. Fry chicken for 4 to 6 minutes per side until golden brown and cooked through.
  7. Transfer to a paper towel-lined plate or wire rack to drain excess oil.
  8. In a small bowl, mix mayonnaise, garlic, lemon juice, salt, and pepper to make the aioli.
  9. Spread garlic aioli on the buns.
  10. Assemble sandwiches with crispy chicken, lettuce, tomato, and pickles.
