Ingredients
- 1 lb large shrimp, peeled and deveined
- 8 oz pasta (fettuccine or linguine)
- 2 tbsp olive oil or butter
- 2–3 tsp Cajun seasoning
- 3 garlic cloves, minced
- 1/2 onion, diced
- 1 bell pepper, diced (optional)
- 1 cup heavy cream or half-and-half
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Season shrimp with Cajun seasoning.
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil or butter in a large skillet over medium-high heat. Sauté shrimp until pink and cooked through. Remove and set aside.
- In the same skillet, add more oil or butter if needed. Sauté onion, garlic, and bell pepper until softened.
- Pour in chicken broth and bring to a simmer, scraping up browned bits from the pan.
- Stir in heavy cream and let simmer until slightly thickened.
- Add Parmesan cheese and stir until melted and smooth.
- Return shrimp to the skillet, then add pasta. Toss to combine and heat through.
- Season with salt and pepper. Garnish with fresh parsley and serve.
Notes
- Add crushed red pepper flakes for extra heat.
- Use spinach, mushrooms, or cherry tomatoes for extra veggies.
- Substitute cream with half-and-half or coconut milk for a lighter or dairy-free version.
- Replace shrimp with chicken or sausage if preferred.
- Use gluten-free pasta to accommodate dietary needs.
