Caprese Stuffed Avocados are a fresh, no-cook dish that combines creamy avocado with juicy tomatoes, soft mozzarella, and fragrant basil, finished with olive oil and balsamic glaze. Light, flavorful, and elegant, they’re perfect as an appetizer, side, or quick lunch.
Ingredients
- 2 ripe avocados
- 1 cup cherry or grape tomatoes, halved
- 1 cup fresh mozzarella balls or cubes
- 1/4 cup fresh basil leaves, chopped or torn
- 1 tbsp olive oil
- 1–2 tbsp balsamic glaze
- Salt, to taste
- Black pepper, to taste
Instructions
- Cut the avocados in half lengthwise and remove the pits. Scoop out a small amount of flesh if needed to create more space.
- In a bowl, combine tomatoes, mozzarella, and basil.
- Drizzle with olive oil and season with salt and black pepper. Gently toss to combine.
- Spoon the Caprese mixture evenly into each avocado half.
- Drizzle balsamic glaze over the top just before serving.
Notes
- Brush avocado flesh with lemon or lime juice to prevent browning.
- Add pesto or crushed red pepper flakes for extra flavor.
- Mix in grilled chicken or shrimp to make it more filling.
- Burrata can be used instead of mozzarella for extra creaminess.
- Best enjoyed fresh; assemble just before serving.
