Ingredients
- 4 medium carrots, washed and chopped
- 2 medium beets, peeled and chopped
- 1 tbsp lemon juice (optional)
- 1 tsp fresh ginger, grated (optional)
- 1/2 cup water (if blending instead of juicing)
Instructions
- Wash and roughly chop carrots and beets.
- If using a juicer: feed carrots and beets through the juicer, alternating with lemon or ginger if using. Stir and serve immediately.
- If using a blender: combine chopped carrots, beets, and water. Blend until smooth.
- Strain the mixture through a fine mesh sieve or nut milk bag to remove pulp.
- Stir in lemon juice or ginger if desired. Serve chilled or over ice.
