- 1 large head of cauliflower
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- Fresh parsley or chives for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Remove outer leaves and trim stem of cauliflower, keeping the core intact. Slice into ¾-inch thick steaks.
- Brush both sides of each steak with olive oil and season with garlic powder, onion powder, salt, and pepper.
- Arrange on baking sheet and roast for 20 minutes, flipping halfway, until golden and tender.
- Sprinkle with mozzarella and parmesan, then return to oven for 5–7 minutes until cheese is melted and bubbly.
- Garnish with parsley or chives before serving.

- Add red pepper flakes or smoked paprika for heat.
- Try cheddar or a cheese blend for different flavor profiles.
