Ingredients

  • 1 cup cooked shrimp, peeled, deveined, and chopped
  • 4 slices sourdough, Italian, or thick sandwich bread
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp butter, softened
  • 2 cloves garlic, minced
  • 1 tsp chopped fresh parsley or 1/2 tsp dried Italian seasoning
  • Salt and black pepper, to taste
  • 1 tsp olive oil (for sautéing shrimp, if needed)

Instructions

  1. In a small bowl, mix softened butter with minced garlic and parsley or Italian seasoning to make garlic butter.
  2. Spread garlic butter on one side of each bread slice.
  3. If needed, sauté shrimp in olive oil with garlic, salt, and pepper until just pink. Set aside.
  4. Heat a skillet over medium heat. Place one slice of bread, buttered side down, in the pan.
  5. Top with half the mozzarella, then shrimp, then cheddar. Add second slice of bread, buttered side up.
  6. Cook for 3–4 minutes per side, pressing gently with a spatula, until golden and cheese is melted.
  7. Repeat with second sandwich. Let rest for 1 minute before slicing and serving.
