Ingredients
- 1 cup cooked shrimp, peeled, deveined, and chopped
- 4 slices sourdough, Italian, or thick sandwich bread
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 2 tbsp butter, softened
- 2 cloves garlic, minced
- 1 tsp chopped fresh parsley or 1/2 tsp dried Italian seasoning
- Salt and black pepper, to taste
- 1 tsp olive oil (for sautéing shrimp, if needed)
Instructions
- In a small bowl, mix softened butter with minced garlic and parsley or Italian seasoning to make garlic butter.
- Spread garlic butter on one side of each bread slice.
- If needed, sauté shrimp in olive oil with garlic, salt, and pepper until just pink. Set aside.
- Heat a skillet over medium heat. Place one slice of bread, buttered side down, in the pan.
- Top with half the mozzarella, then shrimp, then cheddar. Add second slice of bread, buttered side up.
- Cook for 3–4 minutes per side, pressing gently with a spatula, until golden and cheese is melted.
- Repeat with second sandwich. Let rest for 1 minute before slicing and serving.
Notes
- Add hot sauce or red pepper flakes for a spicy twist.
- Try provolone or Swiss for a different cheese profile.
- Use garlic Texas toast for extra crunch and flavor.
- Reheat in a skillet or toaster oven to retain crispness.
