Ingredients
- 1 lb ground beef
- 3 medium yellow or russet potatoes, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced (optional)
- 1 teaspoon paprika
- 1 teaspoon dried oregano or Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese (or cheese blend)
- 2 tablespoons olive oil or butter
- Fresh parsley or green onions, chopped (for garnish)
Instructions
- Heat olive oil or butter in a large skillet over medium heat.
- Add diced potatoes and sauté for 8–10 minutes, stirring occasionally, until golden and tender. Remove and set aside.
- In the same skillet, cook ground beef with chopped onion, garlic, and bell pepper until beef is browned and veggies are soft. Drain excess grease.
- Stir in paprika, oregano, salt, and pepper. Return potatoes to the skillet and mix well.
- Let cook for another 2–3 minutes for flavors to meld.
- Sprinkle shredded cheese over the top, cover the skillet, and let sit until the cheese is melted.
- Garnish with parsley or green onions and serve hot.

- Use taco seasoning for a Tex-Mex variation.
- Ground turkey or chicken works well for a lighter version.
