Ingredients

  • 1 lb ground beef
  • 3 medium yellow or russet potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (optional)
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano or Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese (or cheese blend)
  • 2 tablespoons olive oil or butter
  • Fresh parsley or green onions, chopped (for garnish)

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add diced potatoes and sauté for 8–10 minutes, stirring occasionally, until golden and tender. Remove and set aside.
  3. In the same skillet, cook ground beef with chopped onion, garlic, and bell pepper until beef is browned and veggies are soft. Drain excess grease.
  4. Stir in paprika, oregano, salt, and pepper. Return potatoes to the skillet and mix well.
  5. Let cook for another 2–3 minutes for flavors to meld.
  6. Sprinkle shredded cheese over the top, cover the skillet, and let sit until the cheese is melted.
  7. Garnish with parsley or green onions and serve hot.
