Description

Cheesy Ranch Potatoes and Smoked Sausage is a one-pan comfort dish featuring roasted ranch-seasoned potatoes, smoky sausage, and melted cheddar cheese. It’s an easy, hearty, and flavor-packed weeknight meal that’s family- and budget-friendly.


Ingredients

  • 1 (14 oz) package smoked beef sausage, sliced into rounds
  • 2 lbs baby red potatoes, cut into bite-sized chunks
  • 2 tablespoons olive oil
  • 1 (1 oz) packet ranch seasoning mix
  • 1 ½ cups shredded cheddar cheese
  • 2 tablespoons chopped green onions or parsley (optional)
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment or foil.
  2. In a bowl, toss potatoes with olive oil, ranch seasoning, salt, and pepper until well coated.
  3. Spread potatoes on the baking sheet in a single layer and roast for 25–30 minutes, flipping halfway through.
  4. Remove pan, add sliced sausage over the potatoes, and roast for another 10–12 minutes.
  5. Sprinkle cheddar cheese over the top and return to oven for 3–5 minutes, until melted and bubbly.
  6. Garnish with green onions or parsley if desired and serve hot.

Notes

  • Use Yukon Gold or russet potatoes if baby red potatoes are unavailable.
  • Add cayenne or use spicy sausage for heat.
  • Include bell peppers or broccoli in the last 15 minutes of roasting for extra veggies.
  • Drizzle with ranch dressing for creaminess before serving.
