Description

Wholesome yet indulgent Cherry + Chocolate Baked Oatmeal Cups made with hearty oats, sweet-tart cherries, and rich chocolate chips. These soft, portable cups are perfect for make-ahead breakfasts or grab-and-go snacks.


Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped cherries (fresh or frozen, thawed and drained)
  • 1/3 cup chocolate chips
  • 1 1/2 cups milk (dairy or plant-based)
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted coconut oil or butter

Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin or line with paper liners.
  2. In a large bowl, combine rolled oats, baking powder, cinnamon, and salt.
  3. Fold in chopped cherries and chocolate chips.
  4. In a separate bowl, whisk together milk, eggs, maple syrup or honey, vanilla extract, and melted coconut oil or butter.
  5. Pour wet ingredients into dry ingredients and stir until fully combined.
  6. Divide mixture evenly among muffin cups, filling each about three-quarters full.
  7. Bake for 20–25 minutes until centers are set and tops are lightly golden.
  8. Cool for 10 minutes before removing from the pan.
