Ingredients
- 1 1/2 lbs ground chicken
- 1/2 cup bread crumbs
- 1 large egg
- 1/4 cup milk
- 1 tbsp Dijon mustard
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper to taste
- 4 slices ham
- 4 slices Swiss cheese
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup chicken broth
- 1/2 cup heavy cream (or milk)
- 1 tbsp Dijon mustard (for sauce)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a loaf pan.
- In a bowl, mix ground chicken, bread crumbs, egg, milk, Dijon mustard, garlic powder, onion powder, salt, and pepper until well combined.
- Press half of the chicken mixture into the loaf pan.
- Layer ham and Swiss cheese over the chicken mixture.
- Top with remaining chicken mixture, sealing the edges.
- Bake for 45–50 minutes, until internal temperature reaches 165°F.
- While baking, melt butter in a saucepan over medium heat. Whisk in flour to form a roux.
- Gradually whisk in chicken broth and cream. Cook until thickened.
- Stir in Dijon mustard, salt, and pepper to taste. Simmer sauce for 2–3 minutes more.
- Let meatloaf rest for 5–10 minutes, then slice and serve with warm sauce on top.
Notes
- Add shredded Parmesan to chicken mixture for added flavor.
- Use smoked ham and smoked Swiss for a smoky variation.
- Ground turkey can replace chicken if preferred.
- Sprinkle breadcrumb-Parmesan topping for a crunchy finish.
- Let the meatloaf rest before slicing to hold its shape.
