Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil or butter
  • 8 oz fresh mushrooms, sliced
  • 3 cups fresh spinach
  • 3 garlic cloves, minced
  • 1/2 cup heavy cream
  • 4 oz cream cheese
  • 1 cup shredded mozzarella or provolone
  • 1/4 cup grated parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon Italian seasoning or thyme (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Season chicken with salt, pepper, and Italian seasoning if using.
  3. In a skillet, sauté mushrooms in olive oil or butter until golden. Add garlic and cook until fragrant.
  4. Add spinach and cook until wilted. Stir in cream cheese and heavy cream, mixing until smooth.
  5. Remove from heat and stir in half the mozzarella and a bit of parmesan.
  6. Place chicken in the baking dish and pour the creamy mixture over top.
  7. Top with remaining mozzarella and parmesan.
  8. Bake uncovered for 25–30 minutes until chicken is cooked through and top is golden and bubbly.
  9. Let rest for a few minutes before serving.

  • Use boneless chicken thighs for more juiciness.
  • Add sun-dried tomatoes or pesto for a Mediterranean twist.
  • Toss in diced zucchini or cauliflower rice for more veggies.
