Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1 tbsp olive oil or butter
- 3 cloves garlic, minced
- 8 oz fresh mushrooms, sliced
- 4 cups fresh spinach
- 4 oz cream cheese
- 1/2 cup heavy cream
- 1 cup shredded mozzarella or parmesan cheese
- Salt and pepper, to taste
- Optional: 1 tsp Italian seasoning, red pepper flakes, or paprika
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Season chicken with salt, pepper, and optional herbs. Sear in a hot skillet with olive oil until browned on both sides. Set aside (do not cook through).
- In the same skillet, sauté garlic and mushrooms until browned and moisture has evaporated.
- Add spinach and cook until just wilted.
- Reduce heat and stir in cream cheese and heavy cream. Mix until smooth and creamy.
- Place chicken in the baking dish. Spoon the spinach-mushroom sauce over the chicken and top with shredded cheese.
- Bake uncovered for 20–25 minutes, until chicken is cooked through and cheese is golden and bubbly.
- Let rest for a few minutes before serving.
Notes
- Use chicken thighs for more juiciness.
- Swap mushrooms with zucchini or broccoli for variety.
- Sprinkle fresh herbs like basil or parsley on top before serving.
- Add parmesan to the sauce for more depth of flavor.
- Can be assembled ahead and baked later.
