Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 8 oz fresh mushrooms, sliced
  • 4 cups fresh spinach
  • 4 oz cream cheese
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella or parmesan cheese
  • Salt and pepper, to taste
  • Optional: 1 tsp Italian seasoning, red pepper flakes, or paprika

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Season chicken with salt, pepper, and optional herbs. Sear in a hot skillet with olive oil until browned on both sides. Set aside (do not cook through).
  3. In the same skillet, sauté garlic and mushrooms until browned and moisture has evaporated.
  4. Add spinach and cook until just wilted.
  5. Reduce heat and stir in cream cheese and heavy cream. Mix until smooth and creamy.
  6. Place chicken in the baking dish. Spoon the spinach-mushroom sauce over the chicken and top with shredded cheese.
  7. Bake uncovered for 20–25 minutes, until chicken is cooked through and cheese is golden and bubbly.
  8. Let rest for a few minutes before serving.
