Ingredients
- 4 boneless, skinless chicken thighs
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 4 cups baby spinach
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/3 cup grated parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Optional: red pepper flakes for heat
Instructions
- Season chicken thighs with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, sauté garlic for 30 seconds until fragrant.
- Add baby spinach and cook until wilted, about 2–3 minutes.
- Pour in cream and chicken broth, stir, and simmer for 3–4 minutes to thicken slightly.
- Stir in parmesan cheese until melted and smooth.
- Return chicken to the skillet and spoon sauce over the top. Simmer 2–3 minutes more.
- Serve warm with pasta, rice, or crusty bread.
