Ingredients
- 3 cups semi-sweet or dark chocolate chips
- 1 (14-ounce) can sweetened condensed milk
- 2 tablespoons butter
- 3/4 cup maraschino cherries, chopped and patted dry
- 1 tablespoon cherry juice (from the maraschino jar)
- 1/2 teaspoon almond extract or vanilla extract
- Optional: 1/4 cup white chocolate chips, melted (for drizzle)
Instructions
- Line an 8×8-inch baking dish with parchment paper, leaving overhang for easy removal.
- In a saucepan over low heat, melt the chocolate chips, sweetened condensed milk, and butter, stirring constantly until smooth.
- Remove from heat and stir in cherry juice and almond extract.
- Gently fold in chopped, patted-dry maraschino cherries.
- Pour mixture into the prepared pan and smooth the top with a spatula.
- Optionally, drizzle melted white chocolate on top or sprinkle with extra chopped cherries.
- Refrigerate for at least 2–3 hours, or until firm.
- Lift out of the pan using parchment, cut into squares, and serve.
Notes
- Dry the cherries well to prevent the fudge from being too soft.
- Use almond extract for a classic cordial flavor or vanilla for a more neutral taste.
- Store with parchment between layers to avoid sticking.
