Chocolate Pecan Turtle Clusters are rich, gooey homemade candies made with toasted pecans, soft caramel, and smooth melted chocolate. Simple to make and irresistibly indulgent, they’re perfect for holiday gifting, party treats, or a sweet snack any time.
Ingredients
- 2 cups pecan halves (toasted if desired)
- 1 (11 oz) bag soft caramels (about 35 pieces), unwrapped
- 2 tablespoons heavy cream
- 1½ cups semi-sweet or milk chocolate chips
- 1 tablespoon coconut oil or butter (optional)
- Sea salt (optional, for sprinkling on top)
Instructions
- Line a baking sheet with parchment paper or a silicone mat.
- Arrange 3–4 pecan halves into small clusters on the sheet, spaced apart.
- In a microwave-safe bowl, combine unwrapped caramels and cream. Microwave in 30-second bursts, stirring in between, until smooth.
- Spoon caramel over each pecan cluster so it binds the nuts together. Let cool for 10 minutes at room temp or 5 minutes in the fridge.
- Melt chocolate chips (with coconut oil or butter, if using) in 20–30 second intervals in the microwave, stirring until smooth.
- Spoon chocolate over each caramel-topped pecan cluster to cover.
- Optional: Sprinkle with a pinch of sea salt.
- Chill in the fridge for 20–30 minutes until set.
- Store in an airtight container in the fridge until ready to serve.
Notes
- Toasting pecans enhances flavor but is optional.
- Swap pecans for almonds or walnuts for variation.
- Use bittersweet or dark chocolate for a richer taste.
- Drizzle white chocolate on top for a festive look.
- For dairy-free, use coconut milk and vegan chocolate chips.
