Description
Soft and buttery cinnamon roll blondies swirled with sweet cinnamon sugar and topped with a simple glaze. These easy bars capture the comforting flavor of classic cinnamon rolls without yeast or rising time.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 tsp ground cinnamon
- 1/4 cup brown sugar (for cinnamon swirl)
- 3/4 cup powdered sugar
- 1–2 tbsp milk or cream (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, mix the melted butter, brown sugar, and granulated sugar until smooth.
- Add the eggs and vanilla extract, stirring until well combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a thick blondie batter forms.
- In a small bowl, mix the brown sugar and ground cinnamon to make the cinnamon swirl mixture.
- Spread about two-thirds of the batter evenly into the prepared pan.
- Sprinkle the cinnamon sugar mixture over the batter.
- Drop the remaining batter on top and use a knife or skewer to gently swirl it into the cinnamon layer.
- Bake for 25–30 minutes until the edges are set and the center is lightly golden.
- Allow the blondies to cool slightly.
- Mix powdered sugar with milk or cream to make a smooth glaze, then drizzle over the cooled blondies before slicing.
Notes
- Do not overbake to keep the blondies soft and chewy.
- Chopped pecans or walnuts add a pleasant crunch.
- Add a pinch of nutmeg or cardamom to deepen the cinnamon flavor.
- Cream cheese can be mixed into the glaze for a richer frosting.
- Let the blondies cool before cutting to keep clean slices.
