Description

Soft and buttery cinnamon roll blondies swirled with sweet cinnamon sugar and topped with a simple glaze. These easy bars capture the comforting flavor of classic cinnamon rolls without yeast or rising time.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon
  • 1/4 cup brown sugar (for cinnamon swirl)
  • 3/4 cup powdered sugar
  • 12 tbsp milk or cream (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, mix the melted butter, brown sugar, and granulated sugar until smooth.
  4. Add the eggs and vanilla extract, stirring until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a thick blondie batter forms.
  6. In a small bowl, mix the brown sugar and ground cinnamon to make the cinnamon swirl mixture.
  7. Spread about two-thirds of the batter evenly into the prepared pan.
  8. Sprinkle the cinnamon sugar mixture over the batter.
  9. Drop the remaining batter on top and use a knife or skewer to gently swirl it into the cinnamon layer.
  10. Bake for 25–30 minutes until the edges are set and the center is lightly golden.
  11. Allow the blondies to cool slightly.
  12. Mix powdered sugar with milk or cream to make a smooth glaze, then drizzle over the cooled blondies before slicing.

Notes

  • Do not overbake to keep the blondies soft and chewy.
  • Chopped pecans or walnuts add a pleasant crunch.
  • Add a pinch of nutmeg or cardamom to deepen the cinnamon flavor.
  • Cream cheese can be mixed into the glaze for a richer frosting.
