Ingredients
- 1 lb steak (flank, skirt, or sirloin)
- 1 tbsp olive oil (plus more for grilling)
- Salt and pepper to taste
- 1 tsp garlic powder or 2 cloves garlic, minced
- 2 medium zucchini, sliced into rounds or half-moons
- 2 cups cooked grains (quinoa, brown rice, farro, or couscous)
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 2 tbsp fresh herbs (parsley or cilantro), chopped
- 1 tbsp lemon or lime juice
- Optional toppings: avocado slices, crumbled feta or goat cheese, tahini or yogurt dressing
Instructions
- Season the steak with olive oil, salt, pepper, and garlic powder. Let it sit at room temperature for 20 minutes.
- Preheat grill or grill pan to medium-high heat. Drizzle zucchini with olive oil and season with salt and pepper.
- Grill the steak for 3–5 minutes per side depending on thickness and preferred doneness. Let it rest for at least 5 minutes before slicing thinly against the grain.
- Grill the zucchini for 2–3 minutes per side until tender and lightly charred.
- To assemble, layer cooked grains in each bowl. Top with grilled steak, zucchini, cherry tomatoes, red onion, and fresh herbs.
- Finish with a squeeze of lemon or lime juice and add optional toppings as desired.
