Description

Cozy Grilled Steak Bowl with Zucchini is a warm, hearty bowl featuring juicy grilled steak, smoky zucchini, wholesome grains, and fresh toppings. It’s a customizable, balanced meal perfect for dinner or meal prep.


Ingredients

  • 1 lb steak (flank, skirt, or sirloin)
  • 1 tbsp olive oil (plus more for grilling)
  • Salt and pepper to taste
  • 1 tsp garlic powder or 2 cloves garlic, minced
  • 2 medium zucchini, sliced into rounds or half-moons
  • 2 cups cooked grains (quinoa, brown rice, farro, or couscous)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 2 tbsp fresh herbs (parsley or cilantro), chopped
  • 1 tbsp lemon or lime juice
  • Optional toppings: avocado slices, crumbled feta or goat cheese, tahini or yogurt dressing

Instructions

  1. Season the steak with olive oil, salt, pepper, and garlic powder. Let it sit at room temperature for 20 minutes.
  2. Preheat grill or grill pan to medium-high heat. Drizzle zucchini with olive oil and season with salt and pepper.
  3. Grill the steak for 3–5 minutes per side depending on thickness and preferred doneness. Let it rest for at least 5 minutes before slicing thinly against the grain.
  4. Grill the zucchini for 2–3 minutes per side until tender and lightly charred.
  5. To assemble, layer cooked grains in each bowl. Top with grilled steak, zucchini, cherry tomatoes, red onion, and fresh herbs.
  6. Finish with a squeeze of lemon or lime juice and add optional toppings as desired.
