Ingredients
- 12 oz penne or fettuccine pasta
- 2 chicken breasts, sliced into strips
- 2 tbsp Cajun seasoning (plus more to taste)
- 1 tbsp olive oil
- 1 tbsp butter
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3/4 cup grated Parmesan cheese
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- Season chicken with Cajun seasoning.
- Heat olive oil and butter in a large skillet over medium heat. Add chicken and cook until golden brown and fully cooked. Remove and set aside.
- In the same skillet, sauté red and yellow bell peppers with garlic until softened, about 3–4 minutes.
- Pour in heavy cream and chicken broth. Bring to a gentle simmer.
- Stir in Parmesan cheese and cook until sauce thickens, stirring frequently.
- Return chicken to the skillet. Add the cooked pasta and toss everything together.
- Adjust seasoning with more Cajun spice, salt, and pepper to taste. Garnish with fresh parsley and serve hot.
