Ingredients

  • 12 oz penne or fettuccine pasta
  • 2 chicken breasts, sliced into strips
  • 2 tbsp Cajun seasoning (plus more to taste)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. Season chicken with Cajun seasoning.
  3. Heat olive oil and butter in a large skillet over medium heat. Add chicken and cook until golden brown and fully cooked. Remove and set aside.
  4. In the same skillet, sauté red and yellow bell peppers with garlic until softened, about 3–4 minutes.
  5. Pour in heavy cream and chicken broth. Bring to a gentle simmer.
  6. Stir in Parmesan cheese and cook until sauce thickens, stirring frequently.
  7. Return chicken to the skillet. Add the cooked pasta and toss everything together.
  8. Adjust seasoning with more Cajun spice, salt, and pepper to taste. Garnish with fresh parsley and serve hot.
