Description

Creamy chicken with mushrooms and Dijon sauce is a comforting one-skillet meal featuring seared chicken in a velvety sauce made with Dijon mustard, mushrooms, and cream. It’s perfect for weeknights or entertaining guests.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil or butter (plus more if needed)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms (cremini or white), sliced
  • 2 tablespoons Dijon mustard
  • 1/2 cup chicken broth (or white wine)
  • 3/4 cup heavy cream
  • Fresh thyme or chopped parsley, for garnish (optional)

Instructions

  1. Season chicken on both sides with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat. Sear chicken for 5–6 minutes per side, until golden and cooked through. Remove and set aside.
  3. Add more oil if needed. Sauté onion and garlic for 2–3 minutes until softened.
  4. Add mushrooms and cook until browned and moisture has evaporated, about 5 minutes.
  5. Stir in Dijon mustard and deglaze with chicken broth or wine, scraping up browned bits.
  6. Reduce heat and add cream. Simmer for 3–5 minutes until slightly thickened.
  7. Return chicken to the pan and spoon sauce over it. Simmer for 2–3 minutes to blend flavors.
  8. Garnish with fresh herbs and serve hot.

Notes

  • For a lighter version, use half-and-half or Greek yogurt (off heat).
  • Add spinach, sun-dried tomatoes, or roasted garlic for variation.
  • Pork chops or turkey cutlets can replace chicken.
