Description

Ingredients

  • 4 chicken breasts or thighs
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter
  • 3 cloves garlic, minced
  • 8 oz mushrooms (cremini or button), sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh thyme or parsley (optional, for garnish)

Instructions

  1. Season chicken with salt and pepper on both sides.
  2. Heat olive oil or butter in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and nearly cooked through. Remove and set aside.
  3. In the same skillet, add mushrooms and sauté for 5–7 minutes until browned and tender.
  4. Stir in minced garlic and cook for another 30 seconds until fragrant.
  5. Pour in chicken broth, scraping up any browned bits from the pan. Let it simmer and reduce slightly.
  6. Lower heat and stir in heavy cream. Simmer gently until sauce thickens, about 3–5 minutes.
  7. Return chicken to the skillet and cook in the sauce for another 5–7 minutes, until fully cooked.
  8. Stir in Parmesan if using and garnish with chopped thyme or parsley before serving.
