Ingredients

  • 2 (15 oz) cans butter beans, drained and rinsed
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup vegetable broth or chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Heat butter and olive oil in a large skillet over medium heat until melted.
