Ingredients
- 2 (15 oz) cans butter beans, drained and rinsed
- 1 tablespoon butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1/3 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- 1/2 cup vegetable broth or chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 2 tablespoons fresh basil, chopped
Instructions
- Heat butter and olive oil in a large skillet over medium heat until melted.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Stir in chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes. Cook briefly to release flavors.
- Add drained butter beans and pour in the broth. Bring to a gentle simmer and cook for 5–7 minutes.
- Reduce heat to low and stir in heavy cream and grated Parmesan cheese.
- Simmer for about 5 minutes, stirring occasionally, until the sauce thickens slightly.
- Fold in fresh spinach and cook until wilted.

- Sprinkle with freshly chopped basil before serving.
