Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract

  • 1/4 teaspoon salt
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it.
  2. Cream together the softened butter and brown sugar in a large bowl until light and fluffy.
  3. Add the egg and vanilla extract, mixing until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the butter mixture and mix until just combined.
  5. Press the cookie dough evenly into the prepared baking dish.
  6. Bake for 18-20 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  7. While baking, heat the heavy cream in a small saucepan over medium heat until warm but not boiling.
  8. Remove the baked cookie base from the oven and evenly pour the warm cream over it.
  9. Sprinkle the granulated sugar evenly on top of the cream layer.
  10. Return to the oven and bake for an additional 5-7 minutes, until the sugar begins to caramelize.
  11. Let the bars cool completely before slicing. Optionally, use a kitchen torch to further caramelize the sugar topping.
