Ingredients
- 8 chicken pieces (drumsticks, thighs, or breasts with bone and skin)
- 2 tbsp olive oil or melted butter
- 1 cup bread crumbs (panko preferred)
- 1/3 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika (sweet or smoked)
- 1 tsp dried herbs (oregano, thyme, or Italian seasoning)
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with foil or parchment paper.
- Pat chicken pieces dry and brush with olive oil or melted butter.
- In a shallow bowl, mix bread crumbs, Parmesan, garlic powder, onion powder, paprika, herbs, salt, and pepper.
- Press each chicken piece into the crumb mixture, coating all sides evenly. Shake off excess.
- Place chicken on the prepared baking sheet, spaced apart for crisping.
- Bake for 35–45 minutes, turning halfway through, until golden brown and internal temperature is 165°F (74°C).
- Let chicken rest for 5 minutes before serving to retain juices.
