Ingredients
- 2 cups shredded russet or Yukon gold potatoes
- 2 cloves garlic, minced
- 1/3 cup grated Parmesan cheese
- 1 large egg
- 2 tbsp all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- Olive oil or neutral oil, for frying
Instructions
- Shred potatoes and squeeze out as much moisture as possible using a clean towel or cheesecloth.
- In a large bowl, mix shredded potatoes, garlic, Parmesan, egg, flour, salt, and pepper until combined.
- Form the mixture into 6–8 small patties, pressing firmly to help them hold together.
- Heat oil in a skillet over medium heat. Cook patties for 3–4 minutes per side until golden and crispy.
- Transfer to a paper towel-lined plate to drain. Serve hot.
Notes
- Use fresh or thawed frozen shredded potatoes—be sure to squeeze out moisture.
- Swap Parmesan for cheddar for a different flavor.
- Use almond or gluten-free flour to make it gluten-free.
- Store in the fridge for up to 3 days or freeze after cooling completely.
- Reheat in oven or air fryer at 375°F to restore crispiness.
