Description

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Italian breadcrumbs or panko
  • 1 tsp garlic powder
  • 23 tbsp olive oil or butter (for frying)
  • 2 tbsp butter (for sauce)
  • 3 cloves garlic, minced
  • 1 cup heavy cream or half-and-half
  • 1/4 cup grated Parmesan cheese (for sauce)
  • Salt and black pepper, to taste (for sauce)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Pound chicken to even thickness and season with salt and pepper.
  2. Set up breading station: flour in one bowl, beaten eggs in another, and a mix of Parmesan, breadcrumbs, and garlic powder in the third.
  3. Dredge chicken in flour, dip in egg, then coat in Parmesan-breadcrumb mixture.
  4. Heat oil or butter in a skillet over medium heat and cook chicken 4–5 minutes per side until golden and cooked through. Set aside.
  5. In the same skillet, melt 2 tbsp butter over medium-low heat. Add minced garlic and sauté for 1 minute.
  6. Stir in cream and bring to a gentle simmer.
  7. Add Parmesan cheese, stirring until smooth and thickened. Season with salt and pepper to taste.
  8. Return chicken to skillet or spoon sauce over plated chicken. Garnish with parsley and serve.

Notes

  • Add a splash of chicken broth or white wine to the sauce for extra flavor.
  • Stir in spinach or sun-dried tomatoes for variety.
  • Red pepper flakes can be added for a spicy kick.
  • Bake chicken at 400°F for 20–25 minutes as an alternative to frying.
