Ingredients

  • 1 lb lean ground beef (or turkey)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed

  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 32 oz frozen tater tots (about 4 cups)
  • Optional toppings: sliced green onions, sour cream, jalapeños

Instructions

  1. Preheat oven to 400 °F (200 °C).
  2. In a large skillet, cook ground beef and onion over medium heat until browned and soft, about 5–7 minutes.
  3. Add garlic; cook 1 minute more.
  4. Stir in chili powder, cumin, paprika, salt, and pepper; cook for 30 seconds.
  5. Add beans and crushed tomatoes; stir and simmer 5–10 minutes.
  6. Spread chili mixture in a greased 9×13-inch baking dish.
  7. Sprinkle 1 cup cheddar cheese evenly on top.
  8. Arrange tater tots in a single layer over the cheese.
  9. Bake for 25 minutes. Remove foil if used, top with remaining cheese, and bake 5–10 more minutes until tots are golden and cheese is melted.
  10. Let rest 5 minutes, garnish as desired, and serve.
