Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream or half-and-half
- 4 oz cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt, to taste
- Black pepper, to taste
- 1 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)
- Fresh parsley or basil, chopped (optional, for garnish)
- Cooked pasta, rice, or mashed potatoes (for serving)
Instructions
- Season the chicken with salt, pepper, and Italian seasoning, then place in the slow cooker.
- Add minced garlic, chicken broth, and cream cheese pieces on top.
- Cover and cook on low for 5–6 hours or on high for 2.5–3.5 hours, until chicken is tender.
- Remove chicken and shred or slice.
- Whisk the sauce in the slow cooker until smooth, then stir in heavy cream and Parmesan cheese.
- Optional: If sauce is thin, whisk cornstarch with cold water and stir in. Cook on high for 15–20 minutes until thickened.
- Return chicken to the sauce, stir to coat, and serve over pasta, rice, or mashed potatoes. Garnish with fresh herbs if desired.
Notes
- Use half-and-half for a lighter version.
- Add spinach, sun-dried tomatoes, or mushrooms near the end of cooking for variety.
- Can be served with zoodles or cauliflower mash for a low-carb meal.
- Freezes well—cool completely before storing.
