This naturally sweetened date and walnut cake is moist, rich, and refined sugar-free. Made with wholesome ingredients and packed with crunchy walnuts, it’s perfect for a snack, breakfast, or a light dessert.

Ingredients

  • 1 cup pitted dates (Medjool or regular)
  • 3/4 cup hot water
  • 1/2 tsp baking soda
  • 2 large eggs
  • 1 cup whole wheat flour (or all-purpose flour)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup coconut oil or melted butter
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts
  • Optional: 1/2 tsp cinnamon or nutmeg

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan or cake tin with parchment paper.
  2. Soak the dates in hot water with baking soda for 10–15 minutes until soft.
  3. Mash the soaked dates or blend into a thick paste.
  4. In a large bowl, whisk eggs, coconut oil, and vanilla extract.
  5. Add mashed dates and stir until well combined.
  6. In a separate bowl, mix flour, baking powder, salt, and optional spices.
  7. Fold dry ingredients into wet mixture until just combined.
  8. Stir in chopped walnuts.
  9. Pour batter into the prepared pan and smooth the top.
  10. Bake for 40–50 minutes or until a toothpick inserted comes out clean.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Add dried figs, raisins, or shredded coconut for variety.
  • Substitute pecans for walnuts or almond flour for a gluten-free version.
  • Top with sesame seeds or oats for a rustic finish.
